Asparagus Pasta Primavera

Ingredients

  • 2 cup 
    Asparagus
  • 2 cup 
    Carrots
  • 1 1/2 cup 
    Peas
  • 1 tbls 
    Olive Oil
  • 1/2 cup 
    Onions
  • 2 clove 
    Garlic
  • 1 1/2 lb 
    Macaroni
  • 1/2 cup 
    Parmesan Cheese
  • 1/4 cup 
    Parsley
  • 2 tbls 
    White Table Wine
  • 1/2 tsp 
    Table Salt
  • 1/2 tsp 
    Black Pepper

Directions

1. Drop the first 3 ingredients into a large saucepan of boiling water; cook 2 minutes. Drain and set aside.

2. Heat oil in a Dutch oven over medium heat. Add onion and garlic; sauti 2 minutes or until tender. Remove from heat.

3. Add asparagus mixture, fettuccine, 1/4 cup cheese, parsley, wine, salt, and pepper; toss well.

4. Top with remaining cheese.
