Snow Pea and Nectarine Salad

Ingredients

  • 1/2 lb 
    Peas
  • 1 dash 
    Table Salt
  • 1/4 cup 
    Teriyaki Sauce
  • 3 med 
    Nectarines

Directions

1. Bring a pot of salted water to a boil. Blanch snow peas for 30 seconds in rapidly boiling water. Drain and immediately immerse in ice-cold water. When well chilled, drain again and pat dry.

2. Cut nectarines in half lengthwise, remove pit and slice into thin wedges.

3. Toss nectarines and snow peas with 1/4 cup of teriyaki sauce. Add more teriyaki to taste and serve.

4. The nectarine season is short but sweet. You may also use peaches, of course, or even tangerines when the stone fruits are out of season. Also try using a bottled dressing with an Asian twist in place of the teriyaki. Ginger or ginger-lime vinaigrette would be a good choice. Finish with a sprinkling of chopped fresh cilantro.
