Asparagus and Apple Salad

Ingredients

  • 3 cup 
    Asparagus
  • 4 cup 
    Apples
  • 2 tsp 
    Lemon Juice
  • 1/4 cup 
    Raisins
  • 2 tbls 
    Cider Vinegar
  • 1 tbls 
    Olive Oil
  • 2 tsp 
    Honey
  • 1/4 tsp 
    Table Salt
  • 1/4 tsp 
    Dill Weed
  • 1/8 tsp 
    Black Pepper
  • 6 leaf 
    Looseleaf Lettuce

Directions

1. Drop asparagus into a large saucepan of boiling water. Cook 5 minutes. Drain and place into ice water. Drain well.

2. Combine apples and lemon juice in a large bowl. Toss well to coat apple. Add asparagus and raisins, and mix gently.

3. Combine vinegar and next 5 ingredients in a jar. Cover tightly, and shake vigorously.

4. Pour over asparagus mixture. Cover and chill for 3 hours and serve over lettuce leaves.
