1 1/2 cupPink Lentils

1 tspGround Turmeric

1 tspCumin Seed

1/4 tspCayenne Pepper

2 tblsCorn Oil

1/2 cupCilandro

1 pinchTable Salt

1 pinchBlack Pepper

2 tspLemon Peel
Directions
1. Wash and sort lentils, discarding any stones. Cover lentils with 2 inches water and heat to boiling. Lower heat and simmer, covered, until very soft, 35 minutes. Drain well.2. In large skillet, saute large onion, turmeric, cumin, and crushed red pepper in oil for 5 minutes. Reserve 1/4 cup onions.
3. Stir lentils into skillet and cook over low heat for about 15 minutes. Stir frequently, until mixture is thickened. Stir in cilantro and season with salt.
4. Spoon lentil mixture into serving bowl. Sprinkle with reserved 1/4 cup onions and lemon rind.
