Ingredients

4 lbBeef Rib Eye, raw

2 cloveGarlic

1 tspTable Salt

1 tspBlack Pepper

1 tspGround Thyme

CURRANT SAUCE:
-
1 1/2 tspYellow Mustard Seed

12 ozCanned Beef Gravy
-
1/4 cupDried Currants
-
1 tspWater
Directions
1. Heat oven to 350 degrees Fahrenheit.2. Combine the garlic, salt, pepper, and thyme. Press evenly into surface of roast.
3. Place the roast on a rack in a shallow roasting pan. Insert meat thermometer so bulb is centered in thickest part. Do not add water or cover.
4. Roast about 20 minutes per pound for rare to medium. Remove roast from oven when meat thermometer registers 135 degrees Fahrenheit for rare, 155 degrees Fahrenheit for medium. Let stand 15 minutes before carving.
saUce:
1. In a small saucepan, combine the sauce ingredients. Cook over medium heat for 5 minutes, or until bubbly, stirring occasionally. Carve roast into slices. Serve with sauce.
