Squash and Garbanzo Stew

Ingredients

  • 1 med 
    Onions
  • 1 clove 
    Garlic
  • 2 tbls 
    Peanut Oil
  • 1 cup 
    Butternut Squash
  • 1 cup 
    Canned Chicken Broth
  • 1/2 cup 
    Raisins, seedless
  • 1 tsp 
    Ground Turmeric
  • 1 tsp 
    Cinnamon
  • 1/2 tsp 
    Ground Ginger
  • 15 oz 
    Chickpeas, canned
  • 2 cup 
    White Rice, Long-grain

Directions

1. Cook onions and garlic in oil in a 3 quart saucepan, stirring frequently until tender, about 7 minutes.

2. Add remaining ingredients except garbanzo beans and rice. Heat to boiling.

3. Reduce heat. Cover and cook until squash is tender, about 8 minutes.

4. Stir in garbanzo beans. Serve over rice.
