Spinach with Curried Lentils

Ingredients

  • 1 cup 
    Lentils
  • 1 tbls 
    Olive Oil
  • 2 clove 
    Garlic
  • 1/2 lb 
    Spinach, raw
  • 14 oz 
    Canned Tomatoes
  • 2 tbls 
    Soy Sauce
  • 2 tsp 
    Curry Powder
  • 1/4 tsp 
    Ground Ginger
  • 1/4 tsp 
    Cinnamon
  • 1/4 tsp 
    Ground Nutmeg

Directions

1. Wash lentils. Cook in water until tender, about 10 minutes.

2. Heat olive oil in a large pot and when it is hot, add garlic. Saute for 1 minute.

3. Add spinach leaves and cook until leaves wilt, about 10 minutes.

4. Combine the lentils and the rest of the ingredients. Cover and simmer for 15 minutes. Serve over rice, if desired.
