Ginger Baked Beans

Ingredients

  • 1 cup 
    Onions
  • 1/4 cup 
    Ginger Root
  • 4 clove 
    Garlic
  • 2 tbls 
    Corn Oil
  • 30 oz 
    Great Northern Beans, cooked
  • 1/2 cup 
    Brown Sugar
  • 6 oz 
    Tomato Sauce, canned
  • 1/2 cup 
    Molasses
  • 1 tsp 
    Yellow Mustard Seed
  • 1 tsp 
    Ground Ginger
  • 1/2 tsp 
    Ground Thyme
  • 1/4 tsp 
    Cinnamon
  • 1/4 tsp 
    Allspice
  • 2 leaf 
    Bay Leaf
  • 4 oz 
    Gingersnaps

Directions

1. In a medium skillet, saute onions, gingerroot, and garlic in oil for about 8 minutes or until tender.

2. Mix together all ingredients, except gingersnap crumbs, in 2 -quart casserole.

3. Cover and bake at 300 Fahrenheit for 2 hours. Sprinkle top of beans with gingersnap crumbs.

4. Bake, uncovered, until beans are thickened to desired consistency, about 30 minutes. Remove and discard bay leaves. Serve.
