Noodle Salad with Shrimp and Chicken

Ingredients

  • 16 oz 
    Chinese Noodles, dehydrated
  • 16 oz 
    Raw Shrimp
  • 1 tbls 
    Corn Oil
  • 2 med 
    Raw Chicken Breast
  • 1 dash 
    Table Salt
  • 1 dash 
    Black Pepper
  • 2 med 
    Serrano Pepper
  • 3 tbls 
    Lime Juice
  • 2 tbls 
    Fish Sauce
  • 1 tsp 
    Sugar, granulated
  • 3 whole 
    Shallots
  • 1/4 cup 
    Coriander Leaves
  • 1 cup 
    Looseleaf Lettuce

Directions

1. Cover noodles with water until soft, about 15 minutes. Drain well.

2. Add noodles to a large pot of boiling water. Reduce to medium heat and cook until noodles are plump, about 2 minutes. Drain and rinse with cold water. Chill.

3. In a large pot of water, blanch the shrimp for 5 seconds until they curl and turn pink. Remove and cool.

4. Add oil to a wok and add the chopped chicken; saute until the chicken loses the pink color. Season with salt and pepper. Cool.

5. Mix together chiles, lime juice, fish sauce, sugar, shallots, and coriander in a bowl. add chicken, shrimp, and chilled noodles; mix well.

6. Serve over a bed of shredded lettuce.
