Noodle Salad with Shrimp and Chicken

Ingredients

16 ozChinese Noodles, dehydrated

16 ozRaw Shrimp

1 tblsCorn Oil

2 medRaw Chicken Breast

1 dashTable Salt

1 dashBlack Pepper

2 medSerrano Pepper

3 tblsLime Juice

2 tblsFish Sauce

1 tspSugar, granulated

3 wholeShallots

1/4 cupCoriander Leaves

1 cupLooseleaf Lettuce
Directions
1. Cover noodles with water until soft, about 15 minutes. Drain well.2. Add noodles to a large pot of boiling water. Reduce to medium heat and cook until noodles are plump, about 2 minutes. Drain and rinse with cold water. Chill.
3. In a large pot of water, blanch the shrimp for 5 seconds until they curl and turn pink. Remove and cool.
4. Add oil to a wok and add the chopped chicken; saute until the chicken loses the pink color. Season with salt and pepper. Cool.
5. Mix together chiles, lime juice, fish sauce, sugar, shallots, and coriander in a bowl. add chicken, shrimp, and chilled noodles; mix well.
6. Serve over a bed of shredded lettuce.
