6 cupSpinach, raw

1 cupApples

1/4 cupPeanuts

1/4 cupRaisins, seedless

DRESSING

1/3 cupSoybean Oil

1/4 cupMaple Syrup

1/4 cupCider Vinegar

Directions
DRessING1. Combine all dressing ingredients in blender. blend 15 seconds. Chill until ready to use.
2. In a skillet over medium-heat, add oil and saute chicken until no longer pink and tender. Add soy sauce to skillet; cook and stir for a few minutes longer. Remove from heat and set aside.
saLad
1. Combine spinach with dressing and toss. Divide into 6 plates. Divide chicken, apple, peanuts, raisins and place on top of spinach. Serve immediately.
