Broccoli and Cauliflower Gratin

Ingredients

  • 2 lb 
    Broccoli
  • 2 lb 
    Cauliflower
  • 1 lb 
    Carrots
  • 1 tbls 
    Corn Oil
  • 3 tbls 
    Butter
  • 2 cup 
    Bread Crumbs
  • 1/2 cup 
    Parmesan Cheese
  • 1/2 tsp 
    Cayenne Pepper
  • 1/4 tsp 
    Table Salt
  • 1/4 tsp 
    Black Pepper

Directions

1. In a large saucepan of boiling water, cook vegetables until crisp-tender, about 5 minutes. In a colander, drain vegetables and refresh under cold water to stop cooking. Drain vegetables well.

2. In a large skillet, heat oil and 2 tablespoons butter over moderately high heat and saute bread crumbs, stirring, until golden. Stir in Parmesan, cayenne and saute, stirring, until crisp.

3. Preheat oven to 350 degrees Fahrenheit.

4. In another skillet, melt the remaining tablespoon butter over moderate heat and mix the vegetables with salt and pepper. Sprinkle vegetables with bread crumbs and mix to combine.

5. Transfer mixture to a baking dish and bake, uncovered, for 10 minutes, or until just heated through. Serve.
